The production of basil pesto sauce is usually divided into 2 phases:

Phase 1 (Pesto Base). Basil is washed, dried by centrifugation and thinly sliced with olive oil and salt. It is also possible to scald it. The base pesto is preserved in the refrigerator at 2° C for 6-12 months in barrels. The pesto base contains approximately 70% basil, oil and salt.

Phase 2 (Basil Pesto). The pesto base is added oil, cheese, pine nuts, herbs according to the final recipe. The pesto is then put in containers, closed and pasteurized. It will now have a shelf life of 12-24 months. Pesto sauce usually contains 30% basil, 30% oil + other ingredients.
